Enjoy this delicious muffin as breakfast or a snack! Easy to make (and make a lot of) and easy to store.
Ingredients
1/2 pound bulk pork sausage (or desired meat)
12 large eggs
1/2 cup chopped onion
1/4 cup chopped pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese
1/2 cup frozen spinach (optional)
Preparation
Step 1
Preheat oven to 350 degrees. In large skillet cook sausage and bacon.
Step 2
In large bowl beat eggs, add all ingredients and stir.
Step 3
Use a 1/3 measuring cup to scoop into muffin pan. Cook for 20-25 minutes.
Step 4
Store in fridge or freezer. Reheat for a quick breakfast or snack!
