About the Recipe
This is a breakfast favorite - plus it makes the house smell amazing while in the oven! Baked oatmeal is an easy option for variety by being able to mix and match what you bake into the oatmeal and what you put on as a topping.
Ingredients
3 cups rolled oats
1 cup brown sugar (or 1/2 cup brown sugar and 1/2 cup maple syrup)
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
2 eggs (can add additional egg)
½ cup melted butter (can substitude coconut oil)
2 teaspoons vanilla extract
¾ cup dried cranberries
½ cup optional chocolate chips
Preparation
Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.
Step 3
Bake in preheated oven for 40 minutes.
Step 4
Serve fresh and warm all by itself or with desired toppings (yogurt or a little bit of milk).
